  • For the Cobbler Batter:
    • 1/2 cup unsalted butter (1 stick)
    • 1 cup all-purpose flour
    • 1 cup granulated sugar
    • 2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 1 cup whole milk

Instructions

  • Preheat the oven: Preheat your oven to 350°F (175°C).
  • Prepare the peaches: In a mixing bowl, combine the sliced peaches, 1 cup of sugar, cinnamon (if using), and vanilla extract. Stir until the peaches are evenly coated. Set aside.
  • Melt the butter: In a saucepan, melt the butter over low heat. Pour the melted butter into the bottom of a 9×13-inch baking dish.
  • Make the batter: In another mixing bowl, whisk together the flour, 1 cup of sugar, baking powder, and salt. Slowly add the milk, whisking until the batter is smooth and free of lumps.
  • Assemble the cobbler: Pour the batter evenly over the melted butter in the baking dish. Do not stir. Spoon the peach mixture evenly over the batter. Again, do not stir; the batter will rise to the top as it bakes.
  • Bake: Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the cobbler is golden brown and bubbly.
