  • 1/2 cup of soy sauce (low-sodium if preferred)
  • 3 tablespoons of sherry (or substitute with beef broth)
  • 2 tablespoons of brown sugar
  • 2 tablespoons of cornstarch
  • 2 tablespoons of sesame oil
  • 3 tablespoons of vegetable oil, divided
  • 3 cloves of garlic, minced
  • 1 tablespoon of fresh ginger, minced
  • 8 ounces of fresh snow peas, ends trimmed
  • Cooked rice or noodles, for serving
  • Sesame seeds and chopped green onions, for garnish (optional)

Instructions

  1. Marinate the Beef: In a mixing bowl, combine the soy sauce, sherry, brown sugar, and cornstarch. Stir until the sugar and cornstarch are dissolved. Add the sliced flank steak to the bowl, tossing to coat the beef evenly. Let the beef marinate for at least 15 minutes.
  2. Prepare the Skillet: Heat 1 tablespoon of vegetable oil and the sesame oil in a large skillet or wok over medium-high heat. Once the oil is hot, add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
  3. Cook the Beef: Add half of the marinated beef to the skillet in a single layer. Cook for about 1-2 minutes per side, until the beef is browned and cooked through. Remove the beef from the skillet and set it aside. Repeat with the remaining beef, adding more oil if necessary.
  4. Cook the Snow Peas: In the same skillet, add the remaining tablespoon of vegetable oil. Add the snow peas and stir-fry for about 2 minutes, until they are bright green and crisp-tender.
  5. Combine and Serve: Return the cooked beef to the skillet with the snow peas. Toss everything together to coat the beef and snow peas in the sauce. Cook for an additional 1-2 minutes, until everything is heated through.
  6. Serve: Serve the beef and snow peas over cooked rice or noodles. Garnish with sesame seeds and chopped green onions, if desired.
