Ingredients

  • 1012 fresh jalapeno peppers
  • 2 cups apple cider vinegar
  • 6 cups granulated sugar
  • 1 packet (3 ounces) liquid pectin
  • 1/4 teaspoon salt
  • Green food coloring (optional)

Instructions

  1. Prepare the Jalapenos: Wash and remove the stems and seeds from the jalapenos. Finely chop them.
  2. Blend the Ingredients: Combine chopped jalapenos with apple cider vinegar in a blender. Blend until smooth.
  3. Cook the Mixture: Pour the jalapeno mixture into a large pot. Add sugar and salt. Bring to a boil, then reduce to a simmer for 10 minutes.
  4. Add Pectin: Stir in the liquid pectin. Return to a boil and cook for another minute.
  5. Add Food Coloring: If using, add a few drops of green food coloring to achieve desired color.
  6. Can the Jelly: Pour hot jelly into sterilized jars, leaving 1/4 inch headspace. Seal and process in a water bath canner for 10 minutes.
