- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or use cooking spray.
- Prepare Zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.
- Mix Wet Ingredients: In a large mixing bowl, combine sugar, vegetable oil, eggs, and vanilla extract. Beat until well combined and smooth.
- Add Zucchini: Stir in the grated zucchini until evenly distributed throughout the mixture.
- Combine Dry Ingredients: In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Mix Everything Together: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Add Optional Ingredients: Fold in chopped nuts and raisins or chocolate chips if using, for added texture and flavor.
- Pour batter into Pan: Pour the batter into the prepared loaf pan, spreading it evenly with a spatula.
