Description

  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins or chocolate chips (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or use cooking spray.
  2. Prepare Zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.
  3. Mix Wet Ingredients: In a large mixing bowl, combine sugar, vegetable oil, eggs, and vanilla extract. Beat until well combined and smooth.
  4. Add Zucchini: Stir in the grated zucchini until evenly distributed throughout the mixture.
  5. Combine Dry Ingredients: In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  6. Mix Everything Together: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  7. Add Optional Ingredients: Fold in chopped nuts and raisins or chocolate chips if using, for added texture and flavor.
  8. Pour batter into Pan: Pour the batter into the prepared loaf pan, spreading it evenly with a spatula.
  9. Bake: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
