- 1 green bell pepper, chopped

- 1 (14.5 oz) can diced tomatoes
- 1 (10 oz) can cream of mushroom soup
- 1/2 cup chicken broth
- 2 cups shredded cheddar cheese, divided
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper, to taste
- 12 oz spaghetti
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Cook the spaghetti: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Drain and set aside.
- Cook the turkey and vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, cooking for 5-7 minutes until softened. Add the garlic and cook for another minute until fragrant. Add the ground turkey, breaking it up with a spoon, and cook until browned and fully cooked through.
- Add tomatoes and seasonings: Stir in the diced tomatoes, cream of mushroom soup, chicken broth, oregano, basil, salt, and pepper. Let the mixture simmer for about 5-7 minutes, allowing the flavors to meld.
- Combine with spaghetti and cheese: Add the cooked spaghetti to the skillet and toss to coat with the sauce. Stir in 1 cup of shredded cheddar cheese.
- Transfer to baking dish: Pour the spaghetti mixture into the prepared baking dish, spreading it evenly. Sprinkle the remaining 1 cup of shredded cheddar cheese over the top.
- Bake the casserole: Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
