Description

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 1 (10 oz) can cream of mushroom soup
  • 1/2 cup chicken broth
  • 2 cups shredded cheddar cheese, divided
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper, to taste
  • 12 oz spaghetti
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook the spaghetti: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Drain and set aside.
  3. Cook the turkey and vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, cooking for 5-7 minutes until softened. Add the garlic and cook for another minute until fragrant. Add the ground turkey, breaking it up with a spoon, and cook until browned and fully cooked through.
  4. Add tomatoes and seasonings: Stir in the diced tomatoes, cream of mushroom soup, chicken broth, oregano, basil, salt, and pepper. Let the mixture simmer for about 5-7 minutes, allowing the flavors to meld.
  5. Combine with spaghetti and cheese: Add the cooked spaghetti to the skillet and toss to coat with the sauce. Stir in 1 cup of shredded cheddar cheese.
  6. Transfer to baking dish: Pour the spaghetti mixture into the prepared baking dish, spreading it evenly. Sprinkle the remaining 1 cup of shredded cheddar cheese over the top.
  7. Bake the casserole: Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Garnish and serve: Remove from the oven, garnish with fresh parsley if desired, and serve hot.
