  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 pound ground turkey
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup chicken broth
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, lime wedges

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent.
  3. Stir in minced garlic and cook for another minute.
  4. Add diced bell peppers and cook until softened.
  5. Add ground turkey and cook until browned.
  6. Mix in spices: chili powder, cumin, paprika, oregano, salt, and pepper.
  7. Stir in beans: black beans and kidney beans.
  8. Add diced tomatoes and tomato sauce.
  9. Pour in chicken broth and bring to a boil.
  10. Reduce heat and simmer for 30-40 minutes, stirring occasionally.
  11. Adjust seasoning if necessary and serve hot with your favorite toppings.
