- 1 teaspoon of chili powder
- 1 teaspoon of cumin
- 1/2 teaspoon of paprika
- Salt and pepper to taste
- 1 tablespoon of honey (optional, for a touch of sweetness)
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Prepare the Marinade: In a mixing bowl or resealable plastic bag, combine the tequila, lime juice, olive oil, minced garlic, chili powder, cumin, paprika, salt, pepper, and honey (if using). Stir or shake the bag to mix the ingredients well.
- Marinate the Chicken: Add the chicken breasts to the marinade, ensuring they’re fully coated. Seal the bag or cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.
- Preheat the Grill or Skillet: If grilling, preheat your grill to medium-high heat. If cooking on the stovetop, heat a large skillet over medium-high heat.
- Cook the Chicken:
- Grilling Method: Remove the chicken from the marinade and discard the marinade. Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
- Stovetop Method: Heat a bit of oil in the skillet. Cook the chicken for 6-7 minutes per side, or until fully cooked and no longer pink in the center.
- Rest the Chicken: Once cooked, transfer the chicken to a plate and let it rest for 5 minutes to allow the juices to redistribute.
- Garnish and Serve: Garnish the chicken with fresh cilantro and serve with lime wedges on the side. Enjoy the chicken with rice, in tacos, or with a fresh salad.
