Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C).
  2. Prepare the Potatoes: Peel and cut the potatoes into 1-inch cubes. Place them in a large mixing bowl.
  3. Season the Potatoes: Add the olive oil, taco seasoning, garlic powder, smoked paprika (if using), salt, and black pepper to the bowl with the potatoes. Drizzle with fresh lime juice. Toss the potatoes until they are evenly coated with the seasoning mixture.
  4. Arrange on a Baking Sheet: Spread the seasoned potatoes in a single layer on a baking sheet. Make sure they are spaced out so they can crisp up properly.
  5. Roast the Potatoes: Roast in the preheated oven for 25-30 minutes, turning the potatoes halfway through cooking, until they are golden brown and crispy on the outside and tender on the inside.
