Description

Pioneer Woman Slow Cooker Potato Soup is a rich, creamy soup made with tender potatoes, onions, and a blend of seasonings. The slow cooking process allows the flavors to meld beautifully, creating a delicious, smooth texture. This soup is perfect for a cozy dinner or as a starter, and can easily be customized with various toppings like cheese, bacon, and green onions.

Ingredients

Scale

  • 6 large russet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup sour cream
  • 4 slices of beef bacon, cooked and crumbled (optional)
  • 1 cup shredded cheddar cheese (for garnish)
  • 2 green onions, sliced (for garnish)
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 1/2 tsp smoked paprika (optional)

Instructions

  1. Place the diced potatoes in the slow cooker along with the chopped onions and minced garlic.
  2. Pour the chicken broth over the vegetables, making sure they are fully submerged.
  3. Season with salt, pepper, thyme, and smoked paprika for a depth of flavor.
  4. Set the slow cooker to cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender.
  5. Use a potato masher or immersion blender to blend the soup to your desired consistency. You can leave it chunky or blend it smooth.
  6. Stir in the heavy cream and sour cream, making the soup rich and creamy.
  7. Adjust seasoning with additional salt and pepper if needed.
  8. Serve hot, topped with crumbled bacon, shredded cheddar cheese, and sliced green onions.
