Description

Pioneer Woman’s Roasted Parmesan Potatoes are small potatoes that are seasoned with herbs and spices, tossed in olive oil, and roasted until they’re crispy and golden. Just before they finish roasting, they’re sprinkled with Parmesan cheese, which melts into a delicious, savory crust. The result is a dish that’s both crunchy and tender, with a rich, cheesy flavor that complements the natural sweetness of the potatoes.

  • 2 pounds of small potatoes (such as baby Yukon Gold or red potatoes), halved or quartered
  • 3 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of dried Italian seasoning
  • 1/2 teaspoon of paprika
  • Salt and pepper to taste
  • 1/2 cup of grated Parmesan cheese
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Prepare the Potatoes: In a large mixing bowl, combine the halved or quartered potatoes with olive oil, garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper. Toss the potatoes until they are evenly coated with the oil and seasonings.
  3. Arrange on Baking Sheet: Spread the seasoned potatoes in a single layer on the prepared baking sheet, cut side down. This helps them get extra crispy on the edges.
  4. Roast the Potatoes: Place the baking sheet in the preheated oven and roast the potatoes for 25-30 minutes, or until they are golden brown and crispy on the outside and tender on the inside.
  5. Add Parmesan: About 5 minutes before the potatoes are done, remove the baking sheet from the oven and sprinkle the grated Parmesan cheese evenly over the potatoes. Return the baking sheet to the oven and continue roasting until the cheese is melted and slightly crispy, about 5 more minutes.
  6. Garnish and Serve: Once the potatoes are done, remove them from the oven and transfer them to a serving platter. Garnish with freshly chopped parsley if desired. Serve hot and enjoy!
