Ingredients

Scale
  • 1 cup mashed ripe bananas (about 23 bananas)
  • 1 cup canned pumpkin puree
  • 1/2 cup melted butter
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. Prepare the Wet Ingredients:
    • In a large bowl, combine mashed bananas, pumpkin puree, melted butter, granulated sugar, brown sugar, eggs, and vanilla extract. Mix until well combined.
  3. Combine the Dry Ingredients:
    • In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. Mix Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Avoid overmixing.
  5. Add Nuts (Optional):
    • Gently fold in the chopped walnuts or pecans if using.
  6. Pour and Bake:
    • Pour the batter into the prepared loaf pan. Smooth the top with a spatula.
  7. Bake:
    • Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and Serve:
    • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
