    • 1 tablespoon cornstarch
  • For the Crumble Topping:
    • 1 cup all-purpose flour
    • 1/2 cup old-fashioned oats
    • 1/2 cup packed brown sugar
    • 1/4 cup granulated sugar
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, cold and cut into small cubes

Instructions

  • Preheat the oven: Preheat your oven to 350°F (175°C).
  • Prepare the peaches: In a large mixing bowl, combine the sliced peaches, granulated sugar, lemon juice, vanilla extract, cinnamon, nutmeg (if using), and cornstarch. Toss until the peaches are evenly coated. Pour the peach mixture into a 9×13-inch baking dish.
  • Make the crumble topping: In another mixing bowl, combine the flour, oats, brown sugar, granulated sugar, cinnamon, and salt. Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or fork to cut the butter into the mixture until it resembles coarse crumbs.
