  • 1 cup long-grain white rice
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 can (8 ounces) tomato sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 small onion, finely chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven: Set it to 375°F (190°C).
  2. Cook the ground beef: In a large skillet, heat olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened. Add ground beef and cook until browned. Drain any excess fat.
  3. Add garlic and spices: Stir in the minced garlic, chili powder, cumin, paprika, salt, and black pepper. Cook for an additional 2 minutes.
  4. Cook the rice: In a separate pot, cook the rice according to package instructions.
  5. Combine ingredients: In a large mixing bowl, combine the cooked rice, ground beef mixture, black beans, corn, diced tomatoes with green chilies, and tomato sauce. Mix well.
  6. Add cheese: Fold in 1/2 cup of shredded cheddar cheese and 1/2 cup of shredded Monterey Jack cheese into the mixture.
  7. Transfer to baking dish: Spread the mixture evenly in a greased 9×13-inch baking dish.
  8. Top with remaining cheese: Sprinkle the remaining cheddar and Monterey Jack cheeses on top.
  9. Bake: Place in the preheated oven and bake for 20-25 minutes or until the casserole is bubbly and the cheese is melted and golden brown.
  10. Garnish and serve: Remove from the oven, let it cool slightly, garnish with fresh cilantro if desired, and serve.
