- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 small onion, finely chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven: Set it to 375°F (190°C).
- Cook the ground beef: In a large skillet, heat olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened. Add ground beef and cook until browned. Drain any excess fat.
- Add garlic and spices: Stir in the minced garlic, chili powder, cumin, paprika, salt, and black pepper. Cook for an additional 2 minutes.
- Cook the rice: In a separate pot, cook the rice according to package instructions.
- Combine ingredients: In a large mixing bowl, combine the cooked rice, ground beef mixture, black beans, corn, diced tomatoes with green chilies, and tomato sauce. Mix well.
- Add cheese: Fold in 1/2 cup of shredded cheddar cheese and 1/2 cup of shredded Monterey Jack cheese into the mixture.
- Transfer to baking dish: Spread the mixture evenly in a greased 9×13-inch baking dish.
- Top with remaining cheese: Sprinkle the remaining cheddar and Monterey Jack cheeses on top.
- Bake: Place in the preheated oven and bake for 20-25 minutes or until the casserole is bubbly and the cheese is melted and golden brown.
