- 2 cups shredded Mexican cheese blend (cheddar, Monterey Jack, etc.)
- 1 cup shredded pepper jack cheese
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro, chopped (optional, for garnish)

Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain and set aside.
- Make the cheese sauce: In a medium saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 1-2 minutes to create a roux. Slowly whisk in the milk and heavy cream, continuing to whisk until the mixture is smooth and thickened, about 5 minutes.
- Add the cheese and spices: Reduce the heat to low and stir in the shredded Mexican cheese blend and pepper jack cheese until melted and smooth. Add the diced tomatoes with green chilies, chopped pickled jalapeños, cumin, smoked paprika, garlic powder, salt, and pepper. Stir to combine and heat through.
- Combine the pasta and sauce: Add the cooked pasta to the cheese sauce, stirring until the pasta is evenly coated with the sauce.
- Optional baking step: If you prefer a baked mac and cheese, transfer the pasta mixture to a greased baking dish. Top with extra shredded cheese and bake in a preheated 350°F (175°C) oven for 15-20 minutes, or until the cheese is bubbly and golden.
