Description

Pioneer Woman Crockpot French Onion Soup is a delicious and comforting soup made from caramelized onions slowly cooked in beef broth and topped with toasted bread and melted cheese. This slow-cooked version brings out the sweet, deep flavor of the onions while maintaining the simplicity of preparation. The slow cooker does most of the work, allowing the onions to develop a rich flavor without much hands-on effort.

  • 5 large yellow onions, thinly sliced
  • 4 cups beef broth
  • 1/4 cup unsalted butter
  • 2 cloves garlic, minced
  • 1/4 cup dry white wine (optional)
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 bay leaf
  • 6 slices of French bread or baguette
  • 2 cups shredded Gruyère or Swiss cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Melt the butter in a large skillet over medium heat. Add the sliced onions and cook for about 10 minutes until they begin to soften and caramelize. You want them to turn golden but not burn.
  2. Transfer the caramelized onions to your crockpot. Add the minced garlic, beef broth, white wine (if using), Worcestershire sauce, thyme, salt, pepper, and bay leaf.
  3. Set the slow cooker to low and cook for 6-8 hours, allowing the onions to fully caramelize and the flavors to meld.
  4. Remove the bay leaf before serving.
  5. Preheat your broiler during the last 10 minutes of cooking.
  6. Toast the bread slices in the oven until they are golden brown and slightly crispy.
  7. Ladle the soup into oven-safe bowls and place a slice of toasted bread on top of each serving.
  8. Top with shredded Gruyère or Swiss cheese and place the bowls under the broiler until the cheese is melted and bubbly.
  9. Garnish with fresh parsley if desired and serve hot.
