Description

Pioneer Woman Creamy Chicken Noodle Soup is a comforting, rich version of the classic chicken noodle soup. It’s made with tender pieces of chicken, egg noodles, and vegetables, all cooked in a creamy broth. This soup is ideal for a cozy dinner or as a remedy when you’re feeling under the weather. The addition of heavy cream gives it a luxurious texture that sets it apart from traditional chicken noodle soup.

Ingredients

Scale
  • 2 tablespoons olive oil or butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 large carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 pound boneless, skinless chicken breasts or thighs, diced
  • 6 cups low-sodium chicken broth
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • Fresh parsley, chopped for garnish

Instructions

Step 1: Sauté the Vegetables

  • Heat the oil: In a large pot or Dutch oven, heat the olive oil or butter over medium heat.
  • Cook the vegetables: Add the chopped onion, diced carrots, and celery. Sauté for about 5-7 minutes, stirring occasionally, until the vegetables are softened.
  • Add the garlic: Stir in the minced garlic and cook for another minute until fragrant.

Step 2: Cook the Chicken

  • Add the chicken: Add the diced chicken to the pot. Season with salt, pepper, thyme, and parsley. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned on the outside.

Step 3: Add Broth and Noodles

  • Pour in the broth: Add the chicken broth to the pot, stirring to combine.
  • Simmer: Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes until the chicken is cooked through and the vegetables are tender.
  • Add the noodles: Stir in the egg noodles and continue cooking for 8-10 minutes, or until the noodles are tender.

Step 4: Make the Soup Creamy

  • Thicken the soup (optional): If you prefer a thicker broth, whisk together the flour and heavy cream in a small bowl until smooth. Stir this mixture into the soup and let it simmer for an additional 5 minutes to thicken.
  • Add the cream: Stir in the heavy cream, allowing it to heat through without boiling. Simmer for 2-3 minutes until the soup is rich and creamy.

Step 5: Adjust Seasoning and Serve

  • Taste and adjust seasoning: Taste the soup and add more salt or pepper if needed.
  • Garnish and serve: Ladle the creamy chicken noodle soup into bowls and garnish with fresh parsley. Serve with crusty bread or crackers for a complete meal.
