Description

  • 2 cups cooked chicken, shredded or diced
  • 12 oz egg noodles
  • 1 cup frozen peas and carrots
  • 1 cup frozen corn
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1 small onion, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth
  • 1 cup shredded mozzarella cheese (optional)
  • Cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish with cooking spray.
  2. Cook the egg noodles according to package instructions, drain, and set aside.
  3. In a large bowl, combine the cooked chicken, cooked noodles, frozen peas and carrots, and frozen corn.
  4. Add the condensed cream of chicken soup, sour cream, shredded cheddar cheese, mayonnaise, and chopped onion to the bowl. Mix well.
  5. Season with garlic powder, salt, and black pepper. Stir to combine.
  6. Pour in the chicken broth and mix until everything is evenly coated.
  7. Transfer the mixture to the prepared baking dish and spread it out evenly.
  8. Top with shredded mozzarella cheese if desired.
  9. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the cheese is melted and golden brown.
  10. Let it cool slightly before serving.
