  • 2 cups mixed vegetables (peas, carrots, and corn)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 1 package of refrigerated biscuit dough
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the onions and garlic: In a large skillet, melt butter over medium heat. Add chopped onions and minced garlic, cooking until softened.
  3. Mix the filling: In a large bowl, combine shredded chicken, mixed vegetables, cream of chicken soup, cream of mushroom soup, chicken broth, milk, thyme, rosemary, salt, and pepper. Stir in the sautéed onions and garlic.
  4. Prepare the baking dish: Pour the chicken mixture into a 9×13-inch baking dish, spreading it evenly.
  5. Add the biscuits: Arrange the biscuit dough on top of the chicken mixture. If using shredded cheddar cheese, sprinkle it over the top of the biscuits.
  6. Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the biscuits are golden brown and the filling is bubbly.
