- 1 small onion, diced

- 12 large eggs
- 1/2 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 2 cups shredded cheddar cheese
- 2 cups shredded Monterey Jack cheese
- 8 large flour tortillas
- 1 cup salsa
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven: Set it to 350°F (175°C).
- Cook the sausage: In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Remove the sausage from the skillet and set aside.
- Sauté the vegetables: In the same skillet, add the diced onion, red bell pepper, and green bell pepper. Cook until the vegetables are tender, about 5-7 minutes. Remove from heat and set aside.
- Scramble the eggs: In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, ground cumin, and chili powder. Pour the egg mixture into the same skillet used for the sausage and vegetables. Cook over medium heat, stirring occasionally, until the eggs are just set but still slightly soft. Remove from heat.
- Assemble the casserole:
- In a greased 9×13-inch baking dish, spread a thin layer of salsa on the bottom.
- Place two tortillas on top of the salsa, overlapping if necessary.
- Layer with half of the scrambled eggs, half of the sausage, half of the sautéed vegetables, and half of the shredded cheeses.
- Repeat the layers: tortillas, remaining eggs, remaining sausage, remaining vegetables, and remaining cheeses.
- Top with the remaining salsa.
- Bake:
- Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Cool and serve:
- Let the casserole cool for a few minutes before serving. Garnish with fresh cilantro if desired.
