Description

  • For the crust and topping:
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon kosher salt
  • 1 cup unsalted butter, cold, cut into small cubes
  • 1 large egg, lightly beaten
  • For the apple filling:
  • 4 cups peeled, cored, and thinly sliced apples (about 4 medium apples, such as Granny Smith or Honeycrisp)
  • 1/2 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat the oven to 350°F (177°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the parchment.
  2. In a large bowl, whisk together 2 cups flour, 1/2 cup sugar, and 1/2 teaspoon salt. Add the cold butter cubes and use a pastry blender or your fingertips to cut the butter into the flour mixture until it resembles coarse crumbs with some pea-sized butter pieces remaining. This creates a flaky texture.
  3. Add the beaten egg and stir with a fork until the mixture comes together into a dough. It may seem dry at first, but keep mixing; the dough should hold together when squeezed.
  4. Press two-thirds of the dough evenly into the prepared pan, using the back of a measuring cup or your fingers to compact it. Set the remaining dough aside for the topping.
  5. In another large bowl, combine the sliced apples, 1/2 cup sugar, 2 tablespoons flour, cinnamon, nutmeg, and lemon juice. Toss until the apples are evenly coated.
  6. Spread the apple mixture evenly over the crust in the pan. Crumble the reserved dough over the top of the apples, creating a streusel-like topping.
  7. Bake in the preheated oven for 45-50 minutes, until the topping is golden brown and the filling is bubbly. If the top browns too quickly, tent loosely with foil.
  8. Remove from the oven and let cool completely in the pan on a wire rack. This allows the filling to set.
  9. Once cool, use the parchment overhang to lift the bars out of the pan. Cut into 12 bars (or 4 large servings).
  10. Serve at room temperature or slightly warm. Store leftovers in an airtight container in the refrigerator for up to 3 days.

Thaw overnight in the refrigerator. Reheating: Warm in the microwave for 15-20 seconds or in a 300°F oven for 5 minutes.
