Description

Mary Berry Mediterranean Pasta Salad is a delicious blend of pasta, fresh vegetables, olives, and a tangy dressing. Inspired by the Mediterranean diet, this salad is not only flavorful but also packed with nutrients


Ingredients

  • 300g pasta (fusilli or penne)
  • 200g cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 100g feta cheese, crumbled
  • 50g black olives, pitted and sliced
  • 2 tablespoons capers
  • 1 red onion, finely sliced
  • Fresh parsley, chopped

For the Dressing:

  • 4 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 garlic clove, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Boil pasta according to package instructions. Drain and rinse under cold water.
  2. Prepare the Vegetables: While pasta cooks, chop cherry tomatoes, cucumber, bell pepper, and red onion.
  3. Mix the Salad: In a large bowl, combine the cooked pasta, vegetables, olives, capers, and feta cheese.
  4. Make the Dressing: In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, oregano, salt, and pepper.
  5. Combine: Pour the dressing over the pasta salad and toss to coat evenly.
