Ingredients
- 1 cup (2 sticks / 226g) unsalted butter, softened
- 1/2 cup (60g) powdered sugar, plus more for dusting
- 1 teaspoon pure vanilla extract
- 2 cups (240g) all-purpose flour
- 1/4 teaspoon fine sea salt
- 1 cup (120g) pecans, finely chopped
Instructions
- Preheat oven to 350°F (177°C). Line two baking sheets with parchment paper or silicone mats.
- In a large bowl, beat the softened butter, powdered sugar, and vanilla extract with an electric mixer on medium speed until light and fluffy, about 2 minutes. Scrape down the sides of the bowl.
- In a separate bowl, whisk together the flour and salt. Gradually add to the butter mixture, mixing on low speed until just combined. The dough will be crumbly but should hold together when pressed.
- Fold in the finely chopped pecans until evenly distributed.
- Roll the dough into 1-inch balls and place them 1 inch apart on the prepared baking sheets.
- Bake for 20-25 minutes, or until the bottoms are lightly golden and the tops are set but not browned. Rotate the baking sheets halfway through for even baking.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Once cool, roll the cookies in additional powdered sugar to coat generously. For a thicker coating, roll them twice.
- Store in an airtight container at room temperature for up to 1 week.

Storage: Keep in an airtight container at room temperature for up to 1 week, or freeze for up to 2 months. To freeze, place cooled cookies in a single layer on a baking sheet, freeze until solid, then transfer to a freezer bag. Reheat: If desired, warm frozen cookies in a 300°F (150°C) oven for 5 minutes before serving. Dust with powdered sugar again after thawing if needed.
