Ingredients
- 1 large egg white
- 1 tablespoon water
- 1 pound pecan halves
- 1 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon kosher salt
Instructions
- Preheat oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper and set aside.
- In a large bowl, whisk the egg white and water until frothy, about 1 minute. This helps the sugar mixture adhere to the pecans.
- Add the pecan halves to the bowl and toss until evenly coated with the egg white mixture.
- In a separate small bowl, combine the granulated sugar, ground cinnamon, and kosher salt.
- Pour the sugar mixture over the pecans and stir until all pecans are well coated. The mixture will be thick and sandy.
- Spread the coated pecans in a single layer on the prepared baking sheet.
- Bake for 50-60 minutes, stirring every 15 minutes to ensure even baking and prevent sticking. The pecans are done when they are dry, golden brown, and fragrant. They will crisp up further as they cool.
- Remove from oven and let cool completely on the baking sheet. They will harden as they cool. Break apart any clusters.
- Store in an airtight container at room temperature for up to 2 weeks.
