Description

Jiffy Corn Casserole is a classic comfort food dish made with Jiffy corn muffin mix, corn, and a blend of other ingredients. This version skips the sour cream but still delivers a moist, tender casserole with a slightly sweet and savory flavor.

Ingredients

Scale
  • 1 box (8.5 oz) Jiffy corn muffin mix
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (14.75 oz) creamed corn
  • 2 eggs, beaten
  • 1/2 cup melted butter
  • 1 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C).
  2. Prepare the baking dish: Grease a 9×13-inch baking dish.
  3. Mix the ingredients: In a large mixing bowl, combine Jiffy corn muffin mix, whole kernel corn, creamed corn, beaten eggs, melted butter, shredded cheddar cheese, milk, salt, and black pepper. Stir until well combined.
  4. Pour into the dish: Pour the mixture into the prepared baking dish and spread evenly.
  5. Bake: Place the dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  6. Cool and serve: Let the casserole cool for a few minutes before serving. Enjoy!
