  • 1/4 cup (55g) packed light brown sugar
  • 2 tablespoons (25g) granulated sugar
  • 1 large egg yolk, from a large egg (reserve white for another use)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup (40g) raisins

Instructions

  1. Position an oven rack in the center and preheat the oven to 350°F / 177°C. Line a half-sheet pan with parchment paper or a silicone baking mat to prevent spreading and ensure even browning.
  2. In a medium mixing bowl, whisk together the flour, rolled oats, baking soda, kosher salt, and ground cinnamon. Whisking aerates the flour and distributes the leavener and spice evenly throughout the dry mix, which prevents clumps in the dough.
  3. In a separate large bowl, using a sturdy rubber spatula or wooden spoon, cream together the softened unsalted butter, light brown sugar, and granulated sugar until light and fluffy, about 2 minutes. This step incorporates air for a tender cookie and dissolves the sugar for even sweetness.
  4. Add the egg yolk and vanilla extract to the butter-sugar mixture, and stir vigorously until fully combined and smooth, about 30 seconds. The yolk adds richness and structure; ensure no streaks of yolk remain.
  5. Pour the dry ingredient mixture into the wet mixture and fold together with the spatula just until no dry flour is visible. Overmixing will develop gluten and result in tough cookies.
  6. Add the raisins and fold gently to distribute them evenly throughout the dough. If the dough feels too sticky to handle, chill it for 10 minutes before portioning.
  7. Using a 1.5-tablespoon (20-milliliter) cookie scoop or two spoons, portion the dough into 8 equal balls, each about 1.5 inches in diameter. Place them onto the prepared baking sheet, spacing at least 2 inches apart; these cookies spread modestly.
  8. Gently flatten each dough ball slightly with the palm of your hand to about 1/2-inch thickness for even baking. For thicker, chewier cookies, leave the balls rounded; for more even spread, flatten as directed.
  9. Bake the cookies on the center rack for 10 to 12 minutes, rotating the pan halfway through at the 6-minute mark. The cookies should be golden brown at the edges and still pale and soft in the center; the internal temperature of a cookie is not measured, but visual cues of set edges and a slightly puffed center indicate doneness.
  10. Remove the pan from the oven and let the cookies rest on the hot baking sheet for exactly 5 minutes. This residual heat allows the centers to finish setting without overbaking the edges.
  11. Transfer the cookies to a wire rack to cool completely, about 15 minutes. Cooling on a rack prevents soggy bottoms by allowing air to circulate beneath the cookies.
  12. Serve at room temperature. The cookies will be soft and chewy the day they are baked, with a slightly crisp edge that develops further as they cool.

Notes

Store baked cookies in an airtight container at room temperature for up to 3 days, separating layers with parchment to prevent sticking. For longer storage, freeze unbaked dough balls on a parchment-lined sheet until solid, then transfer to a freezer bag for up to 3 months; bake from frozen, adding 2 minutes to the baking time.
