  • 4 cups cooked chicken, shredded
  • 1 box Uncle Ben’s Long Grain & Wild Rice Original Recipe
  • 1 cup sliced mushrooms
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onions
  • 1 cup chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup breadcrumbs (optional)

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C).
  2. Cook Rice: Prepare Uncle Ben’s Long Grain & Wild Rice according to package instructions.
  3. Cook Vegetables: In a large skillet, heat olive oil over medium heat. Add onions, carrots, and celery, and cook until softened.
  4. Add Mushrooms: Stir in the mushrooms and cook until they release their moisture and start to brown.
  5. Combine Ingredients: In a large bowl, combine the cooked chicken, prepared wild rice, sautéed vegetables, chicken broth, cream of chicken soup, sour cream, salt, and pepper. Mix well.
  6. Transfer to Baking Dish: Pour the mixture into a greased 9×13-inch baking dish. Sprinkle with shredded cheddar cheese and breadcrumbs if using.
  7. Bake: Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
