Instructions
- Preheat oven to 400°F (200°C).
- Cook the beef: In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add vegetables: Add chopped onion, green bell pepper, and minced garlic to the skillet. Cook until vegetables are tender.
- Combine ingredients: Stir in diced tomatoes with green chilies, black beans, corn, chili powder, cumin, salt, and black pepper. Let the mixture simmer for 5-10 minutes to blend the flavors.

- Assemble the pie: Pour the beef mixture into a 9×13-inch baking dish. Sprinkle shredded cheddar cheese over the top. Pour the cornbread batter evenly over the beef and cheese.
- Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the cornbread topping is golden brown and cooked through.
- Serve: Let the tamale pie cool for a few minutes before serving. Enjoy with your favorite toppings like sour cream, salsa, or chopped cilantro.
