- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 can (14.5 oz) diced tomatoes
- 1 can (10 oz) diced tomatoes with green chilies (Rotel)
- 1 packet taco seasoning (or homemade taco seasoning)
- 1 packet ranch seasoning (optional)
- 2 cups beef broth
- Salt and pepper, to taste
- 1 tablespoon olive oil (for sautéing)

- Chopped green onions
- Diced avocado
- Fresh cilantro
- Tortilla chips or strips

Instructions
- Brown the Beef: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and diced onions, cooking until the beef is browned and the onions are softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant. Drain excess fat if necessary.
- Add the Seasonings: Stir in the taco seasoning and ranch seasoning (if using). Mix well to coat the beef and onions with the seasonings.
- Add the Rest of the Ingredients: Add the black beans, pinto beans, corn, diced tomatoes, diced tomatoes with green chilies, and beef broth. Stir to combine all the ingredients.
- Simmer the Soup: Bring the mixture to a boil, then reduce the heat and let the soup simmer for 20-25 minutes to allow the flavors to meld together. Stir occasionally.
- Adjust Seasoning: Taste the soup and season with salt and pepper as needed. If you prefer a thicker soup, you can simmer it for a few extra minutes, allowing the liquid to reduce slightly.
