Pioneer Woman Slow Cooker Lasagna is a convenient take on the classic Italian dish, made by layering lasagna noodles, meat sauce, and cheese in a slow cooker. - 1 pound ground beef
- 1 pound beef sausage
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cans (24 ounces each) tomato sauce
- 1 can (6 ounces) tomato paste
- 1 can (14.5 ounces) diced tomatoes
- 2 teaspoons dried basil
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 12 lasagna noodles, uncooked
- 4 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 2 eggs, beaten
Instructions
- Prepare the Meat Sauce: In a large skillet, cook the ground beef, Italian sausage, and diced onion over medium heat until the meat is browned and the onion is tender. Add the minced garlic and cook for another minute. Drain any excess fat.
- Add the Tomatoes: Stir in the tomato sauce, tomato paste, diced tomatoes, dried basil, dried oregano, salt, and black pepper. Simmer the sauce for 20 minutes, stirring occasionally.
- Mix the Cheeses: In a large bowl, combine the ricotta cheese, 1 cup of mozzarella cheese, grated Parmesan cheese, chopped fresh parsley, and beaten eggs. Mix until well combined.
- Layer the Ingredients: Spread a thin layer of the meat sauce on the bottom of the slow cooker. Place a layer of uncooked lasagna noodles on top of the sauce (you may need to break them to fit). Spread a layer of the cheese mixture over the noodles. Repeat the layers, ending with a layer of meat sauce on top.
- Cook: Cover the slow cooker and cook on low for 4 to 5 hours, or until the lasagna noodles are tender and the cheese is melted and bubbly.
- Add the Remaining Cheese: About 10 minutes before serving, sprinkle the remaining 1 cup of mozzarella cheese on top of the lasagna. Cover and cook until the cheese is melted.
- Serve: Let the lasagna cool for a few minutes before serving. Garnish with additional fresh parsley if desired.
