  • 1 can (14.5 ounces) diced tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 2 cups baby carrots
  • 2 cups baby potatoes, halved

Instructions

  1. Season Chicken: Season chicken thighs with salt and pepper.
  2. Sear Chicken: In a skillet, heat olive oil over medium-high heat. Sear chicken thighs until golden brown on both sides. Transfer to slow cooker.
  3. Sauté Vegetables: In the same skillet, sauté chopped onion and minced garlic until fragrant.
  4. Prepare Sauce: Add chicken broth, diced tomatoes, tomato paste, thyme, oregano, and smoked paprika to the skillet. Stir well and bring to a simmer.
