Description

Pioneer Woman Slow Cooker Beef Stroganoff is a hearty dish that features chunks of beef cooked slowly in a rich, creamy sauce with mushrooms and onions. The slow cooking process ensures the beef becomes incredibly tender, while the sauce, made with sour cream and beef broth, adds a velvety texture and deep flavor.

Ingredients

Scale
  • 2 pounds of beef stew meat, cut into chunks
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 pound mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup sour cream
  • 2 tablespoons cornstarch mixed with 2 tablespoons water (optional, for thickening)
  • Egg noodles, rice, or mashed potatoes for serving
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the beef: Season the beef chunks with salt, pepper, and paprika.
  2. Add to slow cooker: Place the seasoned beef in the slow cooker.
  3. Add vegetables: Top with diced onions, minced garlic, and sliced mushrooms.
  4. Pour in liquids: Add the beef broth and Worcestershire sauce.
  5. Cook on low: Cover and cook on low for 7-8 hours or until the beef is tender.
  6. Stir in sour cream: About 30 minutes before serving, stir in the sour cream. If you want a thicker sauce, add the cornstarch mixture.
  7. Serve: Serve the beef stroganoff over egg noodles, rice, or mashed potatoes. Garnish with fresh parsley if desired.
