Description

London Broil is a cooking method rather than a specific cut of meat, typically using top round or flank steak. The meat is marinated to enhance its flavor and tenderness, then seared or broiled to perfection and sliced thinly against the grain for maximum tenderness.

  • 1/3 cup olive oil
  • 1/3 cup soy sauce
  • 2 tbsp balsamic vinegar
  • 2 tbsp Worcestershire sauce
  • 3 cloves garlic, minced
  • 1 tsp Dijon mustard
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional, for heat)

For the London Broil:

  • 2 lbs top round or flank steak
  • 1 tbsp olive oil (for cooking)
  • Salt, to taste
  • Optional: Fresh parsley, chopped, for garnish

Instructions

Step 1: Prepare the Marinade

  • In a medium bowl, whisk together olive oil, soy sauce, balsamic vinegar, Worcestershire sauce, minced garlic, Dijon mustard, dried oregano, black pepper, and red pepper flakes.

Step 2: Marinate the Steak

  • Place the steak in a resealable plastic bag or a shallow dish.
  • Pour the marinade over the steak, ensuring it is fully coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight, turning the steak occasionally.

Step 3: Preheat and Prepare for Cooking

  • Remove the steak from the marinade and pat it dry with paper towels. Reserve the marinade if you want to use it for a sauce.
  • Let the steak sit at room temperature for 20-30 minutes before cooking.

Step 4: Cook the London Broil

  • Heat 1 tablespoon of olive oil in a large skillet or grill pan over medium-high heat.
  • Season the steak lightly with salt and place it in the pan. Sear for 4-5 minutes per side for medium-rare, or cook to your desired doneness (use a meat thermometer: 130°F for medium-rare, 140°F for medium).

Step 5: Rest and Slice

  • Remove the steak from the pan and let it rest on a cutting board for 10 minutes to retain its juices.
  • Slice thinly against the grain to ensure tender pieces.

Optional: Make a Sauce

  • Simmer the reserved marinade in a small saucepan over medium heat for 5-7 minutes until slightly thickened. Drizzle over the sliced steak for extra flavor.

Step 6: Serve

  • Arrange the sliced steak on a platter and garnish with fresh parsley if desired. Serve warm with your favorite sides.
