Description

  • 2 cups cooked chicken, shredded
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cups shredded cheddar cheese
  • 12 corn tortillas
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté onions and bell peppers in olive oil until softened.
  3. Mix soups, tomatoes, chicken broth, sour cream, and spices in a large bowl.
  4. Layer tortillas in the bottom of a baking dish.
  5. Add a layer of chicken, followed by a layer of the soup mixture.
  6. Sprinkle cheese over the top.
  7. Repeat layers until all ingredients are used, ending with cheese on top.
  8. Bake for 30-35 minutes until bubbly and golden.
