- 2 cups cooked chicken, shredded
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 can diced tomatoes with green chilies
- 1 cup chicken broth
- 1 cup sour cream
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cups shredded cheddar cheese
- 12 corn tortillas
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Sauté onions and bell peppers in olive oil until softened.
- Mix soups, tomatoes, chicken broth, sour cream, and spices in a large bowl.
- Layer tortillas in the bottom of a baking dish.
- Add a layer of chicken, followed by a layer of the soup mixture.
- Sprinkle cheese over the top.
- Repeat layers until all ingredients are used, ending with cheese on top.
- Bake for 30-35 minutes until bubbly and golden.
