  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (4 oz) diced green chilies
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 large onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cups Bisquick baking mix
  • 2/3 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the ground beef: In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add taco seasoning: Stir in the taco seasoning packet and 1/2 cup water. Simmer until the liquid is reduced.
  4. Layer the vegetables: In a greased 9×13 inch baking dish, layer the diced tomatoes with green chilies, green chilies, diced onion, and bell peppers over the ground beef.
  5. Mix the creamy layer: In a medium bowl, combine sour cream, mayonnaise, and half of the shredded cheddar and Monterey Jack cheeses. Spread this mixture over the vegetable layer.
  6. Prepare the biscuit topping: In another bowl, mix the Bisquick baking mix with milk until a soft dough forms. Drop spoonfuls of the dough over the creamy layer.
  7. Top with remaining cheese: Sprinkle the remaining cheddar and Monterey Jack cheeses over the biscuit dough.
  8. Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the biscuit topping is golden brown and the cheese is melted and bubbly.
  9. Let it cool: Allow the casserole to cool for a few minutes before serving.
