- 1/2 cup heavy cream or milk
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
- 1/2 cup diced cooked bacon or ham
- 1/2 cup diced bell peppers
- 1/4 cup chopped spinach
- 1/4 cup diced onions
- Salt and pepper to taste
- Non-stick cooking spray
Instructions
- Preheat the oven: Set your oven to 350°F (175°C).
- Prepare the muffin tin: Spray a 12-cup muffin tin with non-stick cooking spray.
- Whisk the eggs and cream: In a large bowl, whisk together the eggs and heavy cream or milk until well combined.
- Add the mix-ins: Stir in the shredded cheese, diced bacon or ham, bell peppers, spinach, onions, salt, and pepper.
- Fill the muffin cups: Pour the egg mixture evenly into the prepared muffin tin, filling each cup about three-quarters full.
- Bake the egg bites: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
- Cool and serve: Let the egg bites cool in the muffin tin for a few minutes before removing. Serve warm or at room temperature.
