  • 2 cups cherry tomatoes, halved
  • 1 jalapeño, seeded and finely chopped
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin

Instructions

  1. Prepare the Vegetables: Dice the bell peppers, chop the red onion, halve the cherry tomatoes, and finely chop the jalapeño and cilantro.
  2. Combine the Beans and Corn: In a large mixing bowl, add the drained and rinsed black beans, black-eyed peas, and corn.
  3. Add the Vegetables: Mix in the diced bell peppers, chopped red onion, halved cherry tomatoes, and jalapeño.
  4. Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, lime juice, sugar, salt, black pepper, garlic powder, and cumin.
  5. Mix Everything Together: Pour the dressing over the bean and vegetable mixture and toss to combine.
