- 1 can of black-eyed peas, drained and rinsed
- 1 can of corn, drained
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 red onion, finely chopped
- 2 cups cherry tomatoes, halved
- 1 jalapeño, seeded and finely chopped
- 1/4 cup chopped fresh cilantro
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 tablespoon lime juice
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
Instructions
- Prepare the Vegetables: Dice the bell peppers, chop the red onion, halve the cherry tomatoes, and finely chop the jalapeño and cilantro.
- Combine the Beans and Corn: In a large mixing bowl, add the drained and rinsed black beans, black-eyed peas, and corn.
- Add the Vegetables: Mix in the diced bell peppers, chopped red onion, halved cherry tomatoes, and jalapeño.
- Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, lime juice, sugar, salt, black pepper, garlic powder, and cumin.
- Mix Everything Together: Pour the dressing over the bean and vegetable mixture and toss to combine.
- Let it Marinate: Cover and refrigerate for at least one hour to let the flavors meld together.
