Pioneer Woman Chow Chow is a classic Southern relish made from a medley of finely chopped vegetables pickled in a tangy-sweet brine.   • 1 medium green cabbage, finely chopped
  • 6 green tomatoes, finely chopped
  • 6 medium onions, finely chopped
  • 2 red bell peppers, finely chopped
  • 2 green bell peppers, finely chopped
  • 1 cup salt
  • 2 cups white vinegar
  • 2 cups sugar
  • 2 tablespoons mustard seeds
  • 2 tablespoons celery seeds
  • 1 tablespoon turmeric

Instructions

  1. Mix chopped vegetables with salt in a large bowl.
  2. Let the mixture sit overnight to draw out moisture.
  3. Drain and rinse the vegetables thoroughly.
  4. In a large pot, combine vinegar, sugar, mustard seeds, celery seeds, and turmeric.
  5. Bring the mixture to a boil, stirring until the sugar dissolves.
  6. Add the drained vegetables to the pot.
  7. Simmer the mixture for about 10 minutes until the vegetables are tender.
  8. Pack the Chow Chow into sterilized jars and seal.
