- 1 cup salt
- 2 cups white vinegar
- 2 cups sugar
- 2 tablespoons mustard seeds
- 2 tablespoons celery seeds
- 1 tablespoon turmeric
Instructions
- Mix chopped vegetables with salt in a large bowl.
- Let the mixture sit overnight to draw out moisture.
- Drain and rinse the vegetables thoroughly.
- In a large pot, combine vinegar, sugar, mustard seeds, celery seeds, and turmeric.
- Bring the mixture to a boil, stirring until the sugar dissolves.
- Add the drained vegetables to the pot.
- Simmer the mixture for about 10 minutes until the vegetables are tender.
- Pack the Chow Chow into sterilized jars and seal.
