Description

The Pioneer Woman Chicken Tortilla Casserole is a hearty, flavorful dish that features layers of shredded chicken, tortillas, cheese, and a zesty sauce. Baked to perfection, it’s a satisfying meal that’s easy to make and packed with delicious Tex-Mex flavors.

  • 2 cups of cooked, shredded chicken
  • 1 can of cream of chicken soup
  • 1 cup of sour cream
  • 1 cup of salsa
  • 1 cup of grated cheddar cheese
  • 1 cup of grated Monterey Jack cheese
  • 1 small onion, finely chopped
  • 1 clove of garlic, minced
  • 1 can of diced green chilies
  • 12 corn tortillas, cut into quarters
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C).
  • Prepare the Ingredients: Cook and shred the chicken, chop the onion, and mince the garlic.
  • Mix the Sauce: In a large bowl, combine the cream of chicken soup, sour cream, salsa, cumin, chili powder, diced green chilies, salt, and pepper.
  • Layer the Casserole: In a greased casserole dish, layer a third of the tortilla quarters, followed by a third of the shredded chicken, a third of the sauce mixture, and a third of the grated cheeses. Repeat these layers two more times.
  • Bake: Bake in the preheated oven for 30-35 minutes or until bubbly and golden brown.
  • Garnish: Top with fresh cilantro before serving.
  • Serve: Allow to cool slightly before serving.
