Pioneer Woman Chicken Enchilada Casserole is a layered dish that includes shredded chicken, tortillas, cheese, and a savory enchilada sauce. It’s baked to perfection, resulting in a delicious and satisfying meal that’s full of flavor.

Ingredients

Scale
  • 3 cups shredded cooked chicken
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 1 can (10 oz) enchilada sauce
  • 1 can (10 oz) cream of chicken soup
  • 1 can (4 oz) diced green chilies
  • 1/2 cup sour cream
  • 1/2 cup chopped onions
  • 12 corn tortillas
  • 1/4 cup chopped fresh cilantro (optional, for garnish)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Sauce: In a large bowl, mix together the enchilada sauce, cream of chicken soup, diced green chilies, and sour cream.
  3. Layer the Ingredients: In a 9×13-inch baking dish, spread a thin layer of the sauce mixture on the bottom. Place a layer of tortillas on top, followed by a layer of shredded chicken, chopped onions, and a mix of cheddar and Monterey Jack cheese. Repeat the layers until all ingredients are used, ending with a layer of cheese on top.
  4. Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  5. Garnish and Serve: Garnish with chopped fresh cilantro if desired. Let the casserole cool for a few minutes before serving.
