- 1 can (14.5 oz) diced tomatoes

- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 tbsp olive oil
- Optional: 1-2 cups cooked chicken or sausage for added protein
- Fresh parsley for garnish (optional)
Instructions
- Sauté the vegetables: Heat the olive oil in a large pot over medium heat. Add the chopped onion, carrots, and celery, and cook for 5-7 minutes until the vegetables begin to soften.
- Add the garlic and spices: Stir in the minced garlic, dried oregano, dried thyme, and bay leaf. Cook for another minute until fragrant.
- Add the cabbage and tomatoes: Stir in the chopped cabbage and can of diced tomatoes, including the juices. Cook for a few minutes to let the cabbage soften slightly.
- Add the broth: Pour in the vegetable or chicken broth, stirring to combine. Bring the soup to a boil, then reduce the heat to low and let it simmer for 25-30 minutes, or until the cabbage and vegetables are tender.
- Season and adjust: Taste the soup and season with salt and pepper as needed. If you’re adding cooked chicken or sausage, stir it into the soup and let it heat through for a few minutes.
- Serve: Remove the bay leaf before serving. Ladle the soup into bowls and garnish with fresh parsley, if desired.
