  • 6 cups vegetable or chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Optional: 1-2 cups cooked chicken or sausage for added protein
  • Fresh parsley for garnish (optional)

Instructions

  1. Sauté the vegetables: Heat the olive oil in a large pot over medium heat. Add the chopped onion, carrots, and celery, and cook for 5-7 minutes until the vegetables begin to soften.
  2. Add the garlic and spices: Stir in the minced garlic, dried oregano, dried thyme, and bay leaf. Cook for another minute until fragrant.
  3. Add the cabbage and tomatoes: Stir in the chopped cabbage and can of diced tomatoes, including the juices. Cook for a few minutes to let the cabbage soften slightly.
  4. Add the broth: Pour in the vegetable or chicken broth, stirring to combine. Bring the soup to a boil, then reduce the heat to low and let it simmer for 25-30 minutes, or until the cabbage and vegetables are tender.
  5. Season and adjust: Taste the soup and season with salt and pepper as needed. If you’re adding cooked chicken or sausage, stir it into the soup and let it heat through for a few minutes.
  6. Serve: Remove the bay leaf before serving. Ladle the soup into bowls and garnish with fresh parsley, if desired.
