- 1 1/2 pounds flank steak, thinly sliced
- 1 pound snow peas, trimmed
- 3 tablespoons soy sauce
- 3 tablespoons sherry or cooking wine
- 2 tablespoons cornstarch
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon sugar
- 1/2 cup beef broth
- 3 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 3 tablespoons vegetable oil, divided
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Cooked rice, for serving
Instructions
- Prepare the beef: In a bowl, combine the sliced beef, soy sauce, sherry, and cornstarch. Mix well and let it marinate for 15 minutes.
- Prepare the sauce: In a separate bowl, mix together the oyster sauce, hoisin sauce, sugar, and beef broth. Set aside.
- Heat the wok: Heat 2 tablespoons of vegetable oil in a large skillet or wok over high heat.
- Cook the beef: Add the marinated beef to the skillet and cook until browned, about 2-3 minutes. Remove the beef from the skillet and set aside.
- Stir-fry the aromatics: Add the remaining tablespoon of vegetable oil to the skillet. Add the garlic and ginger, and stir-fry for about 30 seconds until fragrant.
- Add the snow peas: Toss the snow peas into the skillet and stir-fry for 2-3 minutes until they are tender-crisp.
- Combine: Return the beef to the skillet, pour in the sauce mixture, and stir everything together. Cook for another 2-3 minutes until everything is heated through and well-coated with the sauce.
- Finish: Drizzle with sesame oil, season with salt and pepper to taste, and serve hot over cooked rice.
