  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces egg noodles
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 2 cups shredded cheddar cheese
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the beef: In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned. Drain any excess fat.
  2. Sauté the vegetables: Add the diced onion and minced garlic to the skillet. Cook until softened, about 5 minutes.
  3. Add the tomatoes: Stir in the tomato sauce, diced tomatoes, Italian seasoning, salt, and black pepper. Simmer for 10 minutes.
  4. Cook the noodles: In a large pot, cook the egg noodles according to package instructions. Drain and set aside.
  5. Prepare the creamy mixture: In a medium bowl, combine the sour cream and cottage cheese.
  6. Assemble the casserole: In a large mixing bowl, combine the cooked noodles, beef mixture, and creamy mixture. Stir until well combined.
  7. Layer the ingredients: Spread half of the noodle mixture into a greased 9×13-inch baking dish. Sprinkle with 1 cup of shredded cheddar cheese. Repeat with the remaining noodle mixture and cheese.
