- 8 ounces egg noodles
- 1 cup sour cream
- 1 cup cottage cheese
- 2 cups shredded cheddar cheese
- 1 tablespoon olive oil
- Fresh parsley for garnish (optional)

- Cook the beef: In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned. Drain any excess fat.
- Sauté the vegetables: Add the diced onion and minced garlic to the skillet. Cook until softened, about 5 minutes.
- Add the tomatoes: Stir in the tomato sauce, diced tomatoes, Italian seasoning, salt, and black pepper. Simmer for 10 minutes.
