Description
Pioneer Woman Asparagus Soup is a creamy, smooth soup made from fresh asparagus, cooked with onions, garlic, broth, and finished with cream. It’s a healthy, flavorful soup that is both comforting and elegant. The asparagus flavor shines through, complemented by a silky texture and light seasoning.
Ingredients
Scale
- 1 lb fresh asparagus, trimmed and cut into 1-inch pieces
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 4 cups chicken or vegetable broth
- 1/2 cup heavy cream or half-and-half
- 2 tbsp olive oil or butter
- Salt and pepper to taste
- Fresh lemon juice (optional, for a hint of brightness)
- Fresh parsley or chives for garnish (optional)
Instructions
- Sauté the onion and garlic: Heat olive oil or butter in a large pot over medium heat. Add the chopped onion and garlic, cooking for 5-7 minutes until softened and translucent.
- Add the asparagus: Stir in the asparagus pieces and cook for 3-4 minutes until they start to soften.
- Add the broth: Pour in the chicken or vegetable broth, bringing the mixture to a boil. Reduce the heat and simmer for 15 minutes, or until the asparagus is tender.
- Blend the soup: Remove the soup from the heat and use an immersion blender to blend until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender and blend until smooth.
- Stir in the cream: Return the soup to low heat and stir in the heavy cream or half-and-half. Let it heat through for a few minutes, but do not boil.
- Season and serve: Taste and adjust the seasoning with salt and pepper. Add a squeeze of fresh lemon juice if desired. Serve the soup hot, garnished with fresh parsley or chives.
