  • 1 lb fresh asparagus, trimmed and cut into 1-inch pieces
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 4 cups chicken or vegetable broth
  • 1/2 cup heavy cream or half-and-half
  • 2 tbsp olive oil or butter
  • Salt and pepper to taste
  • Fresh lemon juice (optional, for a hint of brightness)
  • Fresh parsley or chives for garnish (optional)

Instructions

  1. Sauté the onion and garlic: Heat olive oil or butter in a large pot over medium heat. Add the chopped onion and garlic, cooking for 5-7 minutes until softened and translucent.
  2. Add the asparagus: Stir in the asparagus pieces and cook for 3-4 minutes until they start to soften.
  3. Add the broth: Pour in the chicken or vegetable broth, bringing the mixture to a boil. Reduce the heat and simmer for 15 minutes, or until the asparagus is tender.
  4. Blend the soup: Remove the soup from the heat and use an immersion blender to blend until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender and blend until smooth.
  5. Stir in the cream: Return the soup to low heat and stir in the heavy cream or half-and-half. Let it heat through for a few minutes, but do not boil.
  6. Season and serve: Taste and adjust the seasoning with salt and pepper. Add a squeeze of fresh lemon juice if desired. Serve the soup hot, garnished with fresh parsley or chives.
