Description

Nigella Buttermilk Scones are a type of traditional British scone made with buttermilk, which gives them a distinctively light and fluffy texture along with a tangy flavor

Ingredients

Scale
  • 500g plain flour
  • 2 tsp bicarbonate of soda
  • 2 tsp cream of tartar
  • 2 tbsp caster sugar
  • 75g unsalted butter, cubed
  • 300ml buttermilk
  • 1 egg, beaten (for glaze)

Instructions

Preheat the Oven

  • Set the Temperature: Preheat your oven to 220°C (200°C fan)/425°F/gas mark 7.

Prepare the Dry Ingredients

  • Mix the Dry Ingredients: In a large bowl, sift together the flour, bicarbonate of soda, and cream of tartar.
  • Add Sugar: Stir in the caster sugar.

Incorporate the Butter

  • Cut in the Butter: Add the cubed butter to the dry ingredients and rub it in with your fingertips until the mixture resembles fine breadcrumbs.

Add the Buttermilk

  • Pour in the Buttermilk: Make a well in the center and pour in the buttermilk.
  • Mix to Form a Dough: Stir with a knife until the dough comes together. It should be soft but not too sticky.

Shape the Scones

  • Roll Out the Dough: Turn the dough onto a floured surface and knead briefly. Roll it out to about 2.5cm thick.
  • Cut Out the Scones: Use a round cutter to cut out scones and place them on a baking tray lined with parchment paper.

Glaze and Bake

  • Glaze the Scones: Brush the tops with the beaten egg.
  • Bake: Bake in the preheated oven for 12-15 minutes, or until the scones are golden brown and well-risen.
