  • 200g caster sugar
  • 200g unsalted butter (softened)
  • 3 large eggs
  • 1 tsp almond extract
  • 1 tsp baking powder
  • 50g plain flour

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) and grease a 20cm (8-inch) round cake tin.
  2. Mix Butter and Sugar: Cream the softened butter and caster sugar together until light and fluffy.
  3. Add Eggs and Almond Extract: Beat in the eggs one at a time, followed by the almond extract.
  4. Combine Dry Ingredients: In a separate bowl, mix the ground almonds, baking powder, and plain flour.
  5. Combine Wet and Dry Mixtures: Gradually fold the dry ingredients into the wet mixture until fully combined.
  6. Pour and Bake: Pour the batter into the prepared cake tin and smooth the top. Bake for 40-45 minutes or until a skewer inserted into the center comes out clean.
